Ingredients
- 2 cups cooked rice
- 100g salted fish, diced
- 2 eggs, beaten
- 2 cloves garlic, minced
- 1 onion, sliced
- 1 red chili, sliced
- 2 stalks spring onions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a wok or large frying pan over medium heat.
- Add minced garlic and stir-fry until fragrant.
- Add diced salted fish and continue to stir-fry until crispy.
- Push the salted fish to one side of the wok, then pour beaten eggs onto the other side. Scramble the eggs until just set.
- Add sliced onion and red chili, stir-fry until the onions are translucent.
- Add cooked rice to the wok, breaking up any clumps, and stir-fry with the other ingredients.
- Season the fried rice with soy sauce, oyster sauce, salt, and pepper. Stir well to combine.
- Add chopped spring onions and continue to stir-fry for another minute.
- Transfer the salted fish fried rice to a serving dish and garnish with additional spring onions if desired.
