Kibbeh Adas (aleppo-style Red Lentil Kofta)

Ingredients
- 1 cup red lentils, rinsed
- 1 cup fine bulgur
- 1 large onion, finely chopped
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- Salt to taste
- Pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- In a large bowl, combine the red lentils and bulgur. Cover with water and let it soak for 20 minutes.
- Meanwhile, heat the olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent.
- Drain the lentils and bulgur, then transfer them to a food processor. Add the sautéed onions, cumin, coriander, cayenne pepper, salt, and pepper. Process until the mixture is well combined and forms a dough-like consistency.
- Take a small portion of the mixture and shape it into an oval or round kofta. Repeat with the remaining mixture.
- Heat a non-stick skillet over medium heat and lightly grease it with oil. Cook the koftas in batches for 3-4 minutes on each side, or until golden brown and cooked through.
- Serve the koftas hot, garnished with fresh chopped parsley.
