Kibbeh Adas (aleppo-style Red Lentil Kofta)

Ingredients

  • 1 cup red lentils, rinsed
  • 1 cup fine bulgur
  • 1 large onion, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • Salt to taste
  • Pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large bowl, combine the red lentils and bulgur. Cover with water and let it soak for 20 minutes.
  2. Meanwhile, heat the olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent.
  3. Drain the lentils and bulgur, then transfer them to a food processor. Add the sautéed onions, cumin, coriander, cayenne pepper, salt, and pepper. Process until the mixture is well combined and forms a dough-like consistency.
  4. Take a small portion of the mixture and shape it into an oval or round kofta. Repeat with the remaining mixture.
  5. Heat a non-stick skillet over medium heat and lightly grease it with oil. Cook the koftas in batches for 3-4 minutes on each side, or until golden brown and cooked through.
  6. Serve the koftas hot, garnished with fresh chopped parsley.
