Kibbeh Batata (assyrian Mashed Potato Casserole)

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 lb ground beef or lamb
  • 1 onion, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • Salt and pepper to taste
  • 1/4 cup pine nuts, toasted
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Boil the diced potatoes in a large pot of salted water until tender, about 15 minutes. Drain and mash the potatoes with a potato masher or fork.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  4. Add the ground meat to the skillet and cook until browned, breaking it up with a spoon as it cooks.
  5. Stir in the ground cumin, cinnamon, allspice, salt, and pepper. Cook for an additional 2-3 minutes.
  6. Spread half of the mashed potatoes in the bottom of a greased casserole dish. Top with the cooked meat mixture.
  7. Cover the meat layer with the remaining mashed potatoes, smoothing the top with a spatula.
  8. Sprinkle the toasted pine nuts and chopped parsley over the top.
  9. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown.
  10. Let the Kibbeh Batata cool for a few minutes before serving.
