Ingredients
- 2 cups pumpkin puree
- 1 1/2 cups fine bulgur wheat
- 1 large onion, finely chopped
- 1/2 cup fresh parsley, chopped
- 1/4 cup olive oil
- 1 teaspoon ground allspice
- 1 teaspoon ground cinnamon
- Salt and pepper to taste
Instructions
- In a large bowl, mix together the pumpkin puree, bulgur wheat, onion, parsley, olive oil, allspice, cinnamon, salt, and pepper.
- Using wet hands, take a small portion of the mixture and form it into a small football-shaped ball.
- Repeat with the remaining mixture, placing the formed kibbeh on a plate.
- In a large pot, heat about 2 inches of vegetable oil over medium heat.
- Carefully add the kibbeh to the hot oil and fry until golden brown and crispy, about 5-7 minutes.
- Remove the fried kibbeh from the oil and place them on a paper towel-lined plate to drain any excess oil.
- Serve the kibbeh lakteen hot with a side of yogurt or tahini sauce.
