Ingredients
- 500g cod fillets, cut into bite-sized pieces
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup milk
- Vegetable oil, for frying
- 8 small taco shells
- Shredded lettuce
- Diced tomatoes
- Sliced red onion
- Sliced jalapenos
- Sour cream
- Lime wedges
Instructions
- In a bowl, mix the flour, baking powder, salt, and black pepper.
- Gradually whisk in the milk to form a smooth batter.
- Heat the vegetable oil in a large pan over medium heat.
- Dip the cod pieces into the batter, allowing any excess to drip off.
- Fry the battered cod in the hot oil until golden and crispy, about 4-5 minutes per side.
- Remove the fried cod from the oil and place on paper towels to drain any excess oil.
- Warm the taco shells according to package instructions.
- Assemble the kibbeling tacos by filling each shell with shredded lettuce, diced tomatoes, sliced red onion, jalapenos, and a piece of fried cod.
- Top with a dollop of sour cream and serve with lime wedges on the side.
