Ingredients

  • 500g cod fillets, cut into bite-sized pieces
  • 1 cup all-purpose flour

  • 1/2 teaspoon black pepper
  • 1 cup milk
  • Vegetable oil, for frying
  • 8 small taco shells
  • Shredded lettuce
  • Diced tomatoes
  • Sliced red onion
  • Sliced jalapenos
  • Sour cream
  • Lime wedges

Instructions

  1. In a bowl, mix the flour, baking powder, salt, and black pepper.
  2. Gradually whisk in the milk to form a smooth batter.
  3. Heat the vegetable oil in a large pan over medium heat.
  4. Dip the cod pieces into the batter, allowing any excess to drip off.
  5. Fry the battered cod in the hot oil until golden and crispy, about 4-5 minutes per side.
  6. Remove the fried cod from the oil and place on paper towels to drain any excess oil.
  7. Warm the taco shells according to package instructions.
  8. Assemble the kibbeling tacos by filling each shell with shredded lettuce, diced tomatoes, sliced red onion, jalapenos, and a piece of fried cod.
