Kidwelly Castle Cauliflower Cheese

Ingredients

  • 1 large head of cauliflower, cut into florets
  • 2 cups of grated cheddar cheese
  • 1/4 cup of grated Parmesan cheese
  • 2 cups of milk
  • 3 tablespoons of all-purpose flour
  • 3 tablespoons of butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Steam the cauliflower florets until just tender, about 5-7 minutes. Drain and set aside.
  3. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.
  4. Gradually whisk in the milk, stirring constantly until the sauce thickens.
  5. Remove the sauce from the heat and stir in 1 1/2 cups of the cheddar cheese and the Parmesan cheese until melted and smooth. Season with salt and pepper.
  6. Place the steamed cauliflower in a baking dish and pour the cheese sauce over the top. Sprinkle the remaining 1/2 cup of cheddar cheese on top.
  7. Bake for 20-25 minutes, or until the cheese is golden and bubbly.
  8. Serve hot and enjoy!
