Kidwelly Castle Cauliflower Cheese is a classic dish from the Carmarthenshire region of Wales. This creamy and cheesy cauliflower bake is a comforting and delicious side dish that pairs perfectly with a variety of main courses.
Ingredients
- 1 large head of cauliflower, cut into florets
- 2 cups of grated cheddar cheese
- 1/4 cup of grated Parmesan cheese
- 2 cups of milk
- 3 tablespoons of all-purpose flour
- 3 tablespoons of butter
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Steam the cauliflower florets until just tender, about 5-7 minutes. Drain and set aside.
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.
- Gradually whisk in the milk, stirring constantly until the sauce thickens.
- Remove the sauce from the heat and stir in 1 1/2 cups of the cheddar cheese and the Parmesan cheese until melted and smooth. Season with salt and pepper.
- Place the steamed cauliflower in a baking dish and pour the cheese sauce over the top. Sprinkle the remaining 1/2 cup of cheddar cheese on top.
- Bake for 20-25 minutes, or until the cheese is golden and bubbly.
- Serve hot and enjoy!
