Kik Alicha (ethiopian Spiced Coconut Curry)
Kik Alicha is a delicious Ethiopian spiced coconut curry that is perfect for a cozy night in. This aromatic and flavorful dish is sure to warm you up and satisfy your taste buds.
Ingredients
- 1 cup yellow split peas
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ginger, grated
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 can (14 oz) coconut milk
- Salt to taste
- Black pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse the split peas and soak them in water for 30 minutes.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic, grated ginger, turmeric, cumin, and coriander to the pot. Stir well and cook for 2 minutes.
- Drain the split peas and add them to the pot. Stir to combine with the spices and onions.
- Pour in the coconut milk and add salt and black pepper to taste. Bring to a gentle boil, then reduce the heat and let it simmer for 20-25 minutes, or until the split peas are tender.
- Garnish with fresh cilantro before serving.
