Ingredients

  • 2 cups red lentils
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1/2 teaspoon cardamom
  • 1/4 teaspoon cinnamon
  • 4 cups vegetable broth
  • 4 cups fresh spinach, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, sauté the onion, garlic, and ginger until softened.
  3. Add the turmeric, cumin, cardamom, and cinnamon to the pot and stir for 1 minute.
  4. Pour in the vegetable broth and add the lentils. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. Stir in the chopped spinach and cook for an additional 5 minutes.
  6. Season with salt and pepper to taste.
