Ingredients
- 2 cups red lentils
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1/2 teaspoon cardamom
- 1/4 teaspoon cinnamon
- 4 cups vegetable broth
- 4 cups fresh spinach, chopped
- Salt and pepper to taste
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, sauté the onion, garlic, and ginger until softened.
- Add the turmeric, cumin, cardamom, and cinnamon to the pot and stir for 1 minute.
- Pour in the vegetable broth and add the lentils. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Stir in the chopped spinach and cook for an additional 5 minutes.
- Season with salt and pepper to taste.
