Ingredients

  • 1 cup kimchi, chopped

  • 1/2 cup zucchini, julienned
  • 2-3 tablespoons vegetable oil

Instructions

  1. In a large mixing bowl, combine the chopped kimchi, all-purpose flour, water, sliced onion, chopped scallions, julienned carrots, and julienned zucchini. Mix well to form a batter.
  2. Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat.
  3. Pour a ladleful of the kimchi batter into the skillet, spreading it evenly to form a pancake. Cook for 3-4 minutes on each side, or until golden brown and crispy.
  4. Repeat with the remaining batter, adding more oil to the skillet as needed.
  5. Season the cooked kimchi pancakes with salt and pepper to taste.
  6. Serve the kimchi buchimgae hot, cut into wedges, with a dipping sauce if desired.
