Ingredients
- 1 cup kimchi, chopped
- 1/2 cup all-purpose flour
- 1/4 cup water
- 1/2 onion, thinly sliced
- 1/2 cup scallions, chopped
- 1/2 cup carrots, julienned
- 1/2 cup zucchini, julienned
- 2-3 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the chopped kimchi, all-purpose flour, water, sliced onion, chopped scallions, julienned carrots, and julienned zucchini. Mix well to form a batter.
- Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat.
- Pour a ladleful of the kimchi batter into the skillet, spreading it evenly to form a pancake. Cook for 3-4 minutes on each side, or until golden brown and crispy.
- Repeat with the remaining batter, adding more oil to the skillet as needed.
- Season the cooked kimchi pancakes with salt and pepper to taste.
- Serve the kimchi buchimgae hot, cut into wedges, with a dipping sauce if desired.
