Kimchi Fried Rice (김치볶음밥)

Ingredients

  • 2 cups cooked rice
  • 1 cup kimchi, chopped
  • 1/2 cup pork belly or bacon, diced
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • 2 eggs
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium heat.
  2. Add pork belly (or bacon) and cook until browned.
  3. Add onion and garlic, and sauté until fragrant.
  4. Add kimchi and stir-fry for a few minutes.
  5. Add rice, soy sauce, and sesame oil. Stir-fry until well combined.
  6. Push the fried rice to one side of the pan and crack the eggs into the empty space. Scramble the eggs and mix with the rice.
  7. Add green onions and season with salt and pepper to taste. Stir-fry for another minute.
  8. Remove from heat and serve hot.
