Kimchi Jjigae (김치찌개)

Ingredients

  • 2 cups of well-fermented kimchi
  • 8 oz of pork belly, thinly sliced
  • 1 block of soft tofu, cut into cubes
  • 1 onion, sliced
  • 3 cloves of garlic, minced
  • 2 green onions, chopped
  • 2 cups of water or unsalted broth
  • 1 tbsp of Korean red pepper flakes (gochugaru)
  • 1 tbsp of soy sauce
  • 1 tsp of sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the pork belly until browned.
  2. Add the garlic, onion, and kimchi. Cook for 5 minutes.
  3. Pour in the water or broth and bring to a boil.
  4. Add the tofu, green onions, red pepper flakes, and soy sauce. Simmer for 15 minutes.
  5. Season with salt, pepper, and sesame oil to taste.
  6. Serve hot with steamed rice.
