김치찌개 (Kimchi Jjigae) is a classic Korean stew made with kimchi, tofu, pork, and a variety of vegetables. It's a comforting and flavorful dish that is perfect for cold weather or whenever you're craving a spicy and hearty meal.
Ingredients
- 2 cups of well-fermented kimchi
- 1/2 pound of pork belly, thinly sliced
- 1 block of soft tofu
- 1 onion, sliced
- 2 green onions, chopped
- 4 cloves of garlic, minced
- 1 tablespoon of gochugaru (Korean red pepper flakes)
- 1 tablespoon of gochujang (Korean red pepper paste)
- 4 cups of water or anchovy broth
- Salt to taste
Instructions
- Heat a pot over medium heat and add the pork belly. Cook until the pork is slightly browned.
- Add the garlic, onion, and kimchi. Stir-fry for a few minutes until the kimchi is slightly softened.
- Add the gochugaru and gochujang. Stir to combine.
- Pour in the water or anchovy broth. Bring to a boil, then reduce the heat and simmer for 20 minutes.
- Add the tofu and green onions. Simmer for an additional 5 minutes.
- Season with salt to taste.
