Kimchi Jjigae Kimchi Stew (김치찌개)

Ingredients

  • 2 cups of well-fermented kimchi
  • 1/2 pound of pork belly, thinly sliced
  • 1 block of soft tofu
  • 1 onion, sliced
  • 2 green onions, chopped
  • 4 cloves of garlic, minced
  • 1 tablespoon of gochugaru (Korean red pepper flakes)
  • 1 tablespoon of gochujang (Korean red pepper paste)
  • 4 cups of water or anchovy broth
  • Salt to taste

Instructions

  1. Heat a pot over medium heat and add the pork belly. Cook until the pork is slightly browned.
  2. Add the garlic, onion, and kimchi. Stir-fry for a few minutes until the kimchi is slightly softened.
  3. Add the gochugaru and gochujang. Stir to combine.
  4. Pour in the water or anchovy broth. Bring to a boil, then reduce the heat and simmer for 20 minutes.
  5. Add the tofu and green onions. Simmer for an additional 5 minutes.
  6. Season with salt to taste.
