김치찜 (Kimchi Jjim) is a traditional Korean dish made with kimchi and various ingredients, creating a flavorful and hearty stew. This dish is a staple in Koryo-saram Cuisine, a unique blend of Korean and Central Asian flavors.
Ingredients
- 2 cups of well-fermented kimchi
- 1 pound of pork belly, thinly sliced
- 1 onion, sliced
- 2 green onions, chopped
- 1 tablespoon of minced garlic
- 1 tablespoon of gochugaru (Korean red pepper flakes)
- 1 tablespoon of soy sauce
- 1 tablespoon of sugar
- 1 tablespoon of sesame oil
- 1 cup of water
Instructions
- Place the pork belly in a large pot and cook over medium heat until browned.
- Add the onion, green onions, and garlic. Cook until the onions are translucent.
- Stir in the gochugaru, soy sauce, and sugar.
- Add the kimchi and water. Bring to a boil, then reduce the heat and simmer for 40 minutes.
- Drizzle with sesame oil and simmer for an additional 10 minutes.
- Serve hot with steamed rice.
