Kimchi Jjim Steamed Kimchi (김치찜)
김치찜 (Kimchi Jjim) is a traditional Korean dish made by steaming kimchi with pork, tofu, and other vegetables. It is a flavorful and hearty dish that is perfect for a comforting meal.
Ingredients
- 1 lb (450g) pork belly, sliced
- 2 cups (500g) kimchi
- 1 block (14 oz) firm tofu, sliced
- 1 onion, sliced
- 2 green onions, cut into 2-inch pieces
- 2 cups (480ml) water
- 2 tbsp (30ml) soy sauce
- 1 tbsp (15ml) sesame oil
- 1 tbsp (15ml) sugar
- 1 tsp (5ml) minced garlic
- 1 tsp (5ml) gochugaru (Korean red pepper flakes)
Instructions
- In a large pot, layer the pork belly, kimchi, tofu, onion, and green onions.
- In a bowl, mix together water, soy sauce, sesame oil, sugar, minced garlic, and gochugaru. Pour the mixture over the ingredients in the pot.
- Cover the pot and bring it to a boil over medium heat. Then reduce the heat to low and simmer for 1 hour.
- Serve the kimchi jjim hot with steamed rice.
