Kimchi Jjim Steamed Kimchi (김치찜)

Ingredients

  • 1 lb (450g) pork belly, sliced
  • 2 cups (500g) kimchi
  • 1 block (14 oz) firm tofu, sliced
  • 1 onion, sliced
  • 2 green onions, cut into 2-inch pieces
  • 2 cups (480ml) water
  • 2 tbsp (30ml) soy sauce
  • 1 tbsp (15ml) sesame oil
  • 1 tbsp (15ml) sugar
  • 1 tsp (5ml) minced garlic
  • 1 tsp (5ml) gochugaru (Korean red pepper flakes)

Instructions

  1. In a large pot, layer the pork belly, kimchi, tofu, onion, and green onions.
  2. In a bowl, mix together water, soy sauce, sesame oil, sugar, minced garlic, and gochugaru. Pour the mixture over the ingredients in the pot.
  3. Cover the pot and bring it to a boil over medium heat. Then reduce the heat to low and simmer for 1 hour.
  4. Serve the kimchi jjim hot with steamed rice.
