Ingredients
- 2 cups of kimchi
- 12 oz of jjolmyeon (chewy wheat noodles)
- 1/2 cup of cucumber, julienned
- 1/2 cup of carrot, julienned
- 1/2 cup of red cabbage, thinly sliced
- 2 green onions, chopped
- 1/4 cup of gochujang (Korean red chili paste)
- 2 tablespoons of soy sauce
- 2 tablespoons of rice vinegar
- 1 tablespoon of sugar
- 1 tablespoon of sesame oil
- 1 tablespoon of sesame seeds
Instructions
- Boil the jjolmyeon according to the package instructions, then rinse under cold water and drain.
- In a large mixing bowl, combine the kimchi, cucumber, carrot, red cabbage, and green onions.
- In a small bowl, mix the gochujang, soy sauce, rice vinegar, sugar, and sesame oil to make the sauce.
- Add the noodles to the vegetable mixture and toss with the sauce until well coated.
- Sprinkle with sesame seeds before serving.
