Ingredients

  • 2 cups of kimchi
  • 12 oz of jjolmyeon (chewy wheat noodles)
  • 1/2 cup of cucumber, julienned
  • 1/2 cup of carrot, julienned
  • 1/2 cup of red cabbage, thinly sliced
  • 2 green onions, chopped
  • 1/4 cup of gochujang (Korean red chili paste)
  • 2 tablespoons of soy sauce
  • 2 tablespoons of rice vinegar
  • 1 tablespoon of sugar
  • 1 tablespoon of sesame oil
  • 1 tablespoon of sesame seeds

Instructions

  1. Boil the jjolmyeon according to the package instructions, then rinse under cold water and drain.
  2. In a large mixing bowl, combine the kimchi, cucumber, carrot, red cabbage, and green onions.
  3. In a small bowl, mix the gochujang, soy sauce, rice vinegar, sugar, and sesame oil to make the sauce.
  4. Add the noodles to the vegetable mixture and toss with the sauce until well coated.
  5. Sprinkle with sesame seeds before serving.
