Kimchi Sundubu Jjigae (김치순두부찌개)

Ingredients

  • 1 cup of kimchi
  • 1/2 pound of soft tofu
  • 1/4 pound of pork belly, thinly sliced
  • 1/2 onion, sliced
  • 2 cloves of garlic, minced
  • 1 green onion, chopped
  • 1 teaspoon of sesame oil
  • 2 cups of anchovy or beef broth
  • 1 tablespoon of Korean red pepper flakes (gochugaru)
  • Salt to taste

Instructions

  1. Prepare the ingredients by cutting the kimchi, tofu, pork belly, onion, garlic, and green onion.
  2. In a pot, sauté the pork belly until browned.
  3. Add the onion and garlic, and cook until fragrant.
  4. Add the kimchi and cook for a few minutes.
  5. Pour in the broth and bring to a boil.
  6. Add the tofu, red pepper flakes, and sesame oil. Simmer for 10 minutes.
  7. Season with salt to taste and garnish with green onion.
