Kingfish Curry (neymeen Curry)
Kingfish Curry, also known as Neymeen Curry, is a popular dish from the Kerala cuisine. This spicy and tangy curry is made with kingfish, coconut milk, and a blend of aromatic spices, making it a delightful treat for seafood lovers.
Ingredients
- 500g kingfish, cut into pieces
- 1 cup thick coconut milk
- 2 onions, finely chopped
- 2 tomatoes, chopped
- 1 inch ginger, grated
- 4 garlic cloves, minced
- 2 green chilies, slit
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp fenugreek seeds
- 1 sprig curry leaves
- 2 tbsp coconut oil
- Salt to taste
Instructions
- Marinate the kingfish pieces with turmeric powder and salt. Keep aside for 15 minutes.
- Heat coconut oil in a pan and add fenugreek seeds. Once they splutter, add chopped onions, ginger, garlic, and green chilies. Saute until the onions turn golden brown.
- Add tomatoes and cook until they turn mushy.
- Now, add red chili powder, coriander powder, and curry leaves. Saute for a few minutes.
- Pour in the thick coconut milk and bring the curry to a gentle simmer.
- Gently add the marinated kingfish pieces and cook for about 10-15 minutes or until the fish is cooked through.
- Adjust the seasoning and garnish with fresh curry leaves.
