Ingredients
- 1 whole chicken, cut into pieces
- 2 cups dried red kidney beans, soaked overnight
- 2 onions, finely chopped

- 2 tomatoes, diced
- 1 green bell pepper, chopped
- 1 hot chili pepper, chopped (optional for heat)
- 2 tbsp tomato paste
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp ground turmeric
- 1 tsp dried thyme
- Salt and pepper to taste
- 4 cups chicken broth
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and minced garlic, and sauté until fragrant.
- Add the chicken pieces to the pot and brown them on all sides.
- Stir in the diced tomatoes, chopped bell pepper, and hot chili pepper (if using). Cook for a few minutes until the vegetables soften.
- Next, add the soaked red kidney beans, tomato paste, ground cumin, ground coriander, ground turmeric, dried thyme, salt, and pepper. Stir well to combine all the ingredients.
- Pour in the chicken broth, cover the pot, and let the stew simmer for about 1 hour, or until the chicken is tender and the beans are cooked through.
