Kip Masala (surinamese Chicken Curry)

Ingredients

  • 1.5 lbs chicken, cut into pieces
  • 2 tbsp vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1 tsp chili powder
  • 1 cup coconut milk
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, and cook until softened.
  3. Add the chicken pieces to the pot and cook until browned on all sides.
  4. Stir in the ground cumin, coriander, turmeric, garam masala, and chili powder, and cook for 2 minutes.
  5. Pour in the coconut milk and chicken broth, and season with salt and pepper.
  6. Simmer the curry for 30 minutes, or until the chicken is cooked through and the sauce has thickened.
  7. Garnish with fresh cilantro before serving.
