Kip Masala (surinamese Chicken Curry)

Ingredients
- 1.5 lbs chicken, cut into pieces
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- 1 tsp garam masala
- 1 tsp chili powder
- 1 cup coconut milk
- 1 cup chicken broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, and cook until softened.
- Add the chicken pieces to the pot and cook until browned on all sides.
- Stir in the ground cumin, coriander, turmeric, garam masala, and chili powder, and cook for 2 minutes.
- Pour in the coconut milk and chicken broth, and season with salt and pepper.
- Simmer the curry for 30 minutes, or until the chicken is cooked through and the sauce has thickened.
- Garnish with fresh cilantro before serving.
