Ingredients
- 1 cup fine bulgur
- 1 1/2 cups hot water
- 2 tablespoons olive oil
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper
- 1/2 cup finely chopped fresh parsley
- 1/4 cup finely chopped fresh mint
- 3 green onions, thinly sliced
- 1/2 cup diced tomatoes
- 1/4 cup lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, pour the hot water over the bulgur. Cover and let it sit for 15 minutes.
- In a small bowl, mix together the olive oil, tomato paste, paprika, cumin, and cayenne pepper.
- Fluff the bulgur with a fork and add the olive oil mixture, stirring to combine.
- Add the parsley, mint, green onions, tomatoes, and lemon juice. Season with salt and pepper, and mix well.
- Cover and refrigerate for at least 1 hour before serving.
