Ingredients

  • 1 cup fine bulgur
  • 1 1/2 cups hot water
  • 2 tablespoons olive oil
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup finely chopped fresh parsley
  • 1/4 cup finely chopped fresh mint
  • 3 green onions, thinly sliced
  • 1/2 cup diced tomatoes
  • 1/4 cup lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, pour the hot water over the bulgur. Cover and let it sit for 15 minutes.
  2. In a small bowl, mix together the olive oil, tomato paste, paprika, cumin, and cayenne pepper.
  3. Fluff the bulgur with a fork and add the olive oil mixture, stirring to combine.
  4. Add the parsley, mint, green onions, tomatoes, and lemon juice. Season with salt and pepper, and mix well.
  5. Cover and refrigerate for at least 1 hour before serving.
