Ingredients

  • 2 cups all-purpose flour
  • 2 large eggs
  • 1/2 teaspoon salt
  • Water, as needed

Instructions

  1. In the bowl of a KitchenAid stand mixer, combine the flour and salt.
  2. Add the eggs and mix on low speed using the dough hook attachment.
  3. If the dough seems dry, add water a little at a time until it comes together.
  4. Knead the dough with the dough hook for 2-3 minutes until smooth and elastic.
  5. Divide the dough into 4 equal parts and roll each part through a pasta roller attachment, gradually decreasing the thickness until desired thickness is reached.
  6. Cut the rolled dough into desired pasta shape using the pasta cutter attachment.
  7. Cook the fresh pasta in boiling water for 2-3 minutes, then drain and serve with your favorite sauce.
