Kitfo (ethiopian Spiced Lamb Meatballs)

Ingredients
- 1 lb ground lamb
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tsp berbere spice blend
- 1/2 tsp cardamom
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
Instructions
- In a large bowl, mix the ground lamb, red onion, garlic, ginger, berbere spice blend, cardamom, salt, and black pepper until well combined.
- Form the mixture into small meatballs, about 1 inch in diameter.
- Heat the olive oil in a large skillet over medium heat.
- Add the meatballs to the skillet and cook for 12-15 minutes, turning occasionally, until browned and cooked through.
- Remove the meatballs from the skillet and place them on a plate lined with paper towels to drain any excess oil.
- Serve the kitfo meatballs hot with injera bread or rice.
