Ingredients
- 1 lb fresh crab, cleaned and cracked
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bunch callaloo leaves, chopped
- 1 scotch bonnet pepper, whole
- 4 cups fish or vegetable broth
- 1 cup coconut milk
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the callaloo leaves and sauté for a few minutes until wilted.
- Add the crab, scotch bonnet pepper, and broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in the coconut milk and simmer for an additional 5 minutes.
- Season with salt and pepper to taste.
- Remove the scotch bonnet pepper before serving.
