Ingredients
- 1 lb fresh conch meat, finely chopped
- 1 cup all-purpose flour
- 1 small onion, finely diced
- 1 bell pepper, finely diced
- 2 cloves garlic, minced
- 2 green onions, finely chopped
- 1 hot pepper, finely diced
- 1 tsp baking powder
- 1/2 tsp thyme
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 cup water
- Vegetable oil for frying
Instructions
- In a large bowl, combine the conch meat, flour, onion, bell pepper, garlic, green onions, hot pepper, baking powder, thyme, paprika, cayenne pepper, salt, and black pepper.
- Gradually add water to the mixture, stirring until a thick batter forms.
- Heat vegetable oil in a deep skillet over medium heat.
- Drop spoonfuls of the conch batter into the hot oil and fry until golden brown, about 3-4 minutes per side.
- Remove the fritters from the oil and drain on paper towels.
- Serve the Kittitian Conch Fritters hot with a side of spicy dipping sauce.
