Kittitian Conch Fritters

Ingredients

  • 1 lb fresh conch meat, finely chopped
  • 1 cup all-purpose flour
  • 1 small onion, finely diced
  • 1 bell pepper, finely diced
  • 2 cloves garlic, minced
  • 2 green onions, finely chopped
  • 1 hot pepper, finely diced
  • 1 tsp baking powder
  • 1/2 tsp thyme
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup water
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine the conch meat, flour, onion, bell pepper, garlic, green onions, hot pepper, baking powder, thyme, paprika, cayenne pepper, salt, and black pepper.
  2. Gradually add water to the mixture, stirring until a thick batter forms.
  3. Heat vegetable oil in a deep skillet over medium heat.
  4. Drop spoonfuls of the conch batter into the hot oil and fry until golden brown, about 3-4 minutes per side.
  5. Remove the fritters from the oil and drain on paper towels.
  6. Serve the Kittitian Conch Fritters hot with a side of spicy dipping sauce.
