Ingredients
- 1 lb conch, cleaned and diced
- 1 onion, finely chopped
- 1 bell pepper, diced
- 2 tomatoes, chopped
- 2 cloves garlic, minced
- 1 scotch bonnet pepper, finely chopped
- 2 tbsp curry powder
- 1 lime, juiced
- Salt and pepper to taste
- 2 tbsp olive oil
- 1/4 cup fresh cilantro, chopped
Instructions
- In a large bowl, combine the diced conch, onion, bell pepper, tomatoes, garlic, and scotch bonnet pepper.
- In a small bowl, mix the curry powder, lime juice, salt, and pepper. Pour this mixture over the conch and vegetables, and toss to coat evenly.
- Heat the olive oil in a skillet over medium heat. Add the conch mixture and cook for 5 minutes, stirring occasionally.
- Remove from heat and let the salad cool to room temperature.
- Sprinkle with fresh cilantro before serving.
