Kittitian Curried Conch Salad

Ingredients

  • 1 lb conch, cleaned and diced
  • 1 onion, finely chopped
  • 1 bell pepper, diced
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 scotch bonnet pepper, finely chopped
  • 2 tbsp curry powder
  • 1 lime, juiced
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large bowl, combine the diced conch, onion, bell pepper, tomatoes, garlic, and scotch bonnet pepper.
  2. In a small bowl, mix the curry powder, lime juice, salt, and pepper. Pour this mixture over the conch and vegetables, and toss to coat evenly.
  3. Heat the olive oil in a skillet over medium heat. Add the conch mixture and cook for 5 minutes, stirring occasionally.
  4. Remove from heat and let the salad cool to room temperature.
  5. Sprinkle with fresh cilantro before serving.
