Kiwi Lamb and Mint Kebabs (Kōpī Whakarite)
Kōpī Whakarite, also known as Kiwi Lamb and Mint Kebabs, is a classic New Zealand dish that combines tender lamb with the fresh flavors of mint. These kebabs are perfect for a summer barbecue or a casual weeknight dinner.
Ingredients
- 1 1/2 pounds lamb, cut into 1-inch pieces
- 1/4 cup olive oil
- 2 tablespoons fresh mint, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 red onion, cut into chunks
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
Instructions
- In a bowl, combine the olive oil, mint, garlic, cumin, paprika, salt, and pepper. Add the lamb pieces and toss to coat. Cover and refrigerate for at least 1 hour.
- Preheat the grill to medium-high heat.
- Thread the marinated lamb, red onion, and bell peppers onto skewers.
- Grill the kebabs for 8-10 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
- Remove from the grill and let rest for a few minutes before serving.
