Kiwi Lamb and Mint Kebabs (Kōpī Whakarite)

Ingredients

  • 1 1/2 pounds lamb, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 2 tablespoons fresh mint, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 red onion, cut into chunks
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks

Instructions

  1. In a bowl, combine the olive oil, mint, garlic, cumin, paprika, salt, and pepper. Add the lamb pieces and toss to coat. Cover and refrigerate for at least 1 hour.
  2. Preheat the grill to medium-high heat.
  3. Thread the marinated lamb, red onion, and bell peppers onto skewers.
  4. Grill the kebabs for 8-10 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
  5. Remove from the grill and let rest for a few minutes before serving.
