Kiwi Lamb and Mint Sausage Rolls (Kōpī Whakarite)
Kōpī Whakarite, or Kiwi Lamb and Mint Sausage Rolls, are a classic New Zealand dish that is perfect for any occasion. These delicious sausage rolls are packed with the flavors of lamb and mint, wrapped in flaky pastry, and are sure to be a hit with friends and family.
Ingredients
- 500g lamb mince
- 1/4 cup fresh mint, finely chopped
- 1 small onion, finely chopped
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 2 sheets puff pastry, thawed
- 1 egg, beaten
- Salt and pepper to taste
Instructions
- In a large bowl, mix together the lamb mince, fresh mint, onion, breadcrumbs, milk, salt, and pepper.
- Preheat the oven to 200°C (390°F) and line a baking tray with parchment paper.
- Cut each sheet of puff pastry in half lengthwise to make 4 long strips.
- Divide the lamb mixture into 4 equal portions and shape each portion into a long sausage shape.
- Place a portion of the lamb mixture along the length of each pastry strip.
- Roll up the pastry to enclose the lamb mixture and brush the edges with beaten egg to seal.
- Cut each roll into 3 smaller rolls and place them on the prepared baking tray.
- Brush the tops of the rolls with beaten egg and bake in the preheated oven for 20-25 minutes or until the pastry is golden and the filling is cooked through.
- Remove from the oven and let cool slightly before serving.
