Ingredients

  • 1 cup arborio rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup diced tomatoes
  • 1 cup chicken broth
  • 1/2 cup white wine
  • 250g paua (abalone), sliced
  • 200g prawns, peeled and deveined
  • 200g mussels, cleaned
  • 1 tsp saffron threads
  • 1 tsp paprika
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. In a paella pan or large skillet, heat some olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the red bell pepper and cook for a few minutes until slightly tender.
  3. Stir in the diced tomatoes, arborio rice, saffron, and paprika. Cook for 2-3 minutes.
  4. Pour in the white wine and chicken broth. Bring to a simmer and let the rice cook for about 15 minutes.
  5. Arrange the paua, prawns, and mussels on top of the rice. Cover and cook for another 10-15 minutes until the seafood is cooked through and the rice is tender.
  6. Season with salt and pepper, and garnish with lemon wedges before serving.
