Kiwi Paua and Seafood Paella (Kai Moana Parāoa)
Kai Moana Parāoa, also known as Kiwi Paua and Seafood Paella, is a traditional dish from New Zealand that showcases the delicious flavors of the sea.
Ingredients
- 1 cup arborio rice
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 cup diced tomatoes
- 1 cup chicken broth
- 1/2 cup white wine
- 250g paua (abalone), sliced
- 200g prawns, peeled and deveined
- 200g mussels, cleaned
- 1 tsp saffron threads
- 1 tsp paprika
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- In a paella pan or large skillet, heat some olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the red bell pepper and cook for a few minutes until slightly tender.
- Stir in the diced tomatoes, arborio rice, saffron, and paprika. Cook for 2-3 minutes.
- Pour in the white wine and chicken broth. Bring to a simmer and let the rice cook for about 15 minutes.
- Arrange the paua, prawns, and mussels on top of the rice. Cover and cook for another 10-15 minutes until the seafood is cooked through and the rice is tender.
- Season with salt and pepper, and garnish with lemon wedges before serving.
