Ingredients
- 500g fresh Pāua (abalone), diced
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 large potatoes, peeled and diced
- 4 cups fish or vegetable stock
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until softened.
- Add the diced Pāua and cook for 3-4 minutes until lightly browned.
- Add the diced potatoes and pour in the fish or vegetable stock. Bring to a boil, then reduce the heat and simmer for 20 minutes or until the potatoes are tender.
- Stir in the heavy cream and season with salt and pepper. Simmer for an additional 10 minutes.
- Remove from heat and ladle the chowder into bowls. Garnish with chopped fresh parsley and serve hot.
