Ingredients

  • 500g fresh Pāua (abalone), diced
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 large potatoes, peeled and diced
  • 4 cups fish or vegetable stock
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until softened.
  2. Add the diced Pāua and cook for 3-4 minutes until lightly browned.
  3. Add the diced potatoes and pour in the fish or vegetable stock. Bring to a boil, then reduce the heat and simmer for 20 minutes or until the potatoes are tender.
  4. Stir in the heavy cream and season with salt and pepper. Simmer for an additional 10 minutes.
  5. Remove from heat and ladle the chowder into bowls. Garnish with chopped fresh parsley and serve hot.
