Ingredients

  • 2 lbs lamb shoulder, bone-in
  • 4 cloves garlic, minced
  • 1 lemon, juiced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 160°C (320°F).
  2. In a bowl, mix the minced garlic, lemon juice, olive oil, oregano, salt, and pepper.
  3. Place the lamb shoulder in a roasting pan and pour the marinade over the meat, ensuring it is well coated.
  4. Cover the roasting pan with aluminum foil and place it in the preheated oven.
  5. Cook for 4 hours, or until the meat is tender and falling off the bone.
  6. Remove the foil for the last 30 minutes of cooking to allow the meat to brown.
  7. Once cooked, remove the lamb from the oven and let it rest for 10 minutes before serving.
