Kleftiko Surprise
Kleftiko Surprise is a traditional Cypriot dish that is bursting with flavor and aroma. This slow-cooked lamb dish is a true delight for the senses, and its surprise element will surely impress your guests.
Ingredients
- 1.5 kg lamb shoulder, bone-in
- 4 large potatoes, peeled and quartered
- 2 red onions, sliced
- 4 garlic cloves, minced
- 1 lemon, juiced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 cup olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 160°C (320°F).
- Place the lamb in a large roasting pan and arrange the potatoes, onions, and garlic around it.
- In a small bowl, mix the lemon juice, oregano, thyme, olive oil, salt, and pepper. Pour this mixture over the lamb and vegetables, ensuring everything is well coated.
- Cover the roasting pan with foil and place it in the oven. Cook for 4 hours, or until the lamb is tender and falling off the bone.
- Remove the foil and increase the oven temperature to 200°C (390°F). Cook for an additional 15-20 minutes to crisp up the lamb and potatoes.
- Once done, remove from the oven and let it rest for 10 minutes before serving.
