Ingredients

  • 1.5 kg lamb shoulder, bone-in
  • 4 large potatoes, peeled and quartered
  • 2 red onions, sliced
  • 4 garlic cloves, minced
  • 1 lemon, juiced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 160°C (320°F).
  2. Place the lamb in a large roasting pan and arrange the potatoes, onions, and garlic around it.
  3. In a small bowl, mix the lemon juice, oregano, thyme, olive oil, salt, and pepper. Pour this mixture over the lamb and vegetables, ensuring everything is well coated.
  4. Cover the roasting pan with foil and place it in the oven. Cook for 4 hours, or until the lamb is tender and falling off the bone.
  5. Remove the foil and increase the oven temperature to 200°C (390°F). Cook for an additional 15-20 minutes to crisp up the lamb and potatoes.
  6. Once done, remove from the oven and let it rest for 10 minutes before serving.
