Kūmara and Kina Salad (Huarahi Kūmara)
Huarahi Kūmara, also known as Kūmara and Kina Salad, is a traditional dish from New Zealand that combines the sweetness of kūmara (sweet potato) with the briny flavor of kina (sea urchin). Ingredients
- 2 kūmara, peeled and diced
- 4 fresh kina (sea urchin), carefully opened and removed from the shell
- 1 red onion, thinly sliced

- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Place the diced kūmara in a pot of boiling water and cook for 8-10 minutes, or until tender. Drain and let cool.
- In a large bowl, combine the kina, red onion, chili, and cilantro.
- Add the cooked kūmara to the bowl.
- Drizzle with olive oil and lemon juice, then season with salt and pepper. Gently toss to combine.
- Divide the salad among serving plates and serve immediately.
