Ingredients

  • 2 kūmara, peeled and diced
  • 4 fresh kina (sea urchin), carefully opened and removed from the shell

  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice

Instructions

  1. Place the diced kūmara in a pot of boiling water and cook for 8-10 minutes, or until tender. Drain and let cool.
  2. In a large bowl, combine the kina, red onion, chili, and cilantro.
  3. Add the cooked kūmara to the bowl.
  4. Drizzle with olive oil and lemon juice, then season with salt and pepper. Gently toss to combine.
