Kūmara and Kiwi Bacon Hash (Whakarite Parāoa)

Ingredients
- 2 large kūmara, peeled and diced
- 6 slices of bacon, chopped
- 1 onion, diced
- 2 kiwi fruit, peeled and diced
- 1 teaspoon of paprika
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the diced kūmara to the skillet and cook for 8-10 minutes, or until the kūmara is tender and slightly browned.
- Push the kūmara to one side of the skillet and add the chopped bacon and diced onion to the other side. Cook for 5-6 minutes, or until the bacon is crispy and the onion is translucent.
- Combine the kūmara, bacon, and onion in the skillet and add the diced kiwi fruit. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
- Sprinkle the paprika over the hash and season with salt and pepper to taste. Stir to combine all the ingredients.
- Remove from heat and serve the Whakarite Parāoa hot.
