Kūmara and Kiwi Bacon Hash (Whakarite Parāoa)

Ingredients

  • 2 large kūmara, peeled and diced
  • 6 slices of bacon, chopped
  • 1 onion, diced
  • 2 kiwi fruit, peeled and diced
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced kūmara to the skillet and cook for 8-10 minutes, or until the kūmara is tender and slightly browned.
  3. Push the kūmara to one side of the skillet and add the chopped bacon and diced onion to the other side. Cook for 5-6 minutes, or until the bacon is crispy and the onion is translucent.
  4. Combine the kūmara, bacon, and onion in the skillet and add the diced kiwi fruit. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
  5. Sprinkle the paprika over the hash and season with salt and pepper to taste. Stir to combine all the ingredients.
  6. Remove from heat and serve the Whakarite Parāoa hot.
