Ingredients
- 250g pasta
- 2 kūmara, peeled and diced
- 200g bacon, diced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 kiwi fruit, peeled and diced
- 1 cup chicken broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- Grated Parmesan cheese for garnish
Instructions
- In a large pot of boiling salted water, cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, cook the diced bacon until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.
- Add the diced kūmara to the skillet and cook until tender and slightly caramelized.
- Add the chopped onion and minced garlic to the skillet and cook until softened.
- Pour in the chicken broth and heavy cream, then add the cooked pasta and diced kiwi fruit. Stir to combine and simmer for a few minutes until the sauce thickens.
- Season with salt and pepper to taste. Serve the pasta in bowls, topped with crispy bacon and grated Parmesan cheese.
