Kūmara and Kiwi Bacon Pasta (Whakarite Parāoa)

Ingredients

  • 250g pasta
  • 2 kūmara, peeled and diced
  • 200g bacon, diced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 kiwi fruit, peeled and diced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish

Instructions

  1. In a large pot of boiling salted water, cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, cook the diced bacon until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.
  3. Add the diced kūmara to the skillet and cook until tender and slightly caramelized.
  4. Add the chopped onion and minced garlic to the skillet and cook until softened.
  5. Pour in the chicken broth and heavy cream, then add the cooked pasta and diced kiwi fruit. Stir to combine and simmer for a few minutes until the sauce thickens.
  6. Season with salt and pepper to taste. Serve the pasta in bowls, topped with crispy bacon and grated Parmesan cheese.
