Kūmara and Kiwi Bacon Quiche (Whakarite Parāoa)

Ingredients

  • 1 ½ cups diced kūmara
  • 6 slices kiwi bacon, chopped
  • 1 cup grated cheese
  • 1 onion, finely chopped
  • 1 ½ cups milk
  • 4 eggs
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a quiche dish.
  2. Boil the diced kūmara until tender, then drain and set aside.
  3. In a frying pan, cook the kiwi bacon and onion until the bacon is crispy and the onion is translucent. Set aside to cool.
  4. In a large bowl, whisk together the milk and eggs. Add the flour, baking powder, salt, and pepper, and mix until smooth.
  5. Stir in the cooked kūmara, kiwi bacon, onion, and grated cheese.
  6. Pour the mixture into the prepared quiche dish and bake for 45 minutes, or until the top is golden and the quiche is set.
  7. Allow the quiche to cool for a few minutes before slicing and serving.
