Kūmara and Kiwi Bacon Quiche (Whakarite Parāoa)

Ingredients
- 1 ½ cups diced kūmara
- 6 slices kiwi bacon, chopped
- 1 cup grated cheese
- 1 onion, finely chopped
- 1 ½ cups milk
- 4 eggs
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 180°C (350°F) and grease a quiche dish.
- Boil the diced kūmara until tender, then drain and set aside.
- In a frying pan, cook the kiwi bacon and onion until the bacon is crispy and the onion is translucent. Set aside to cool.
- In a large bowl, whisk together the milk and eggs. Add the flour, baking powder, salt, and pepper, and mix until smooth.
- Stir in the cooked kūmara, kiwi bacon, onion, and grated cheese.
- Pour the mixture into the prepared quiche dish and bake for 45 minutes, or until the top is golden and the quiche is set.
- Allow the quiche to cool for a few minutes before slicing and serving.
