Kūmara and Kiwi Bacon Soup (Whakarite Parāoa)

Kūmara and Kiwi Bacon Soup (Whakarite Parāoa)

Ingredients

  • 3 large kūmara, peeled and diced
  • 6 slices of bacon, chopped
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 4 cups chicken or vegetable broth
  • 2 kiwi fruit, peeled and diced
  • 1 cup coconut milk
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.
  2. Add the diced onion and minced garlic to the pot and sauté until the onion is soft and translucent.
  3. Add the diced kūmara to the pot and pour in the chicken or vegetable broth. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the kūmara is tender.
  4. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth, then return to the pot.
  5. Add the diced kiwi fruit and coconut milk to the pot, and stir to combine. Simmer for an additional 5 minutes.
  6. Season the soup with salt and pepper to taste. Serve hot, garnished with the crispy bacon.
