Knafeh Pancakes (فطائر الكنافة)
These Knafeh Pancakes are a delicious twist on the traditional Palestinian dessert, combining the flavors of knafeh with the fluffiness of pancakes.
Ingredients
- 1 cup semolina
- 1 cup shredded mozzarella cheese
- 1/2 cup unsalted butter, melted
- 1/4 cup sugar
- 1/4 cup chopped pistachios
- 1/4 cup simple syrup
- 1 tsp orange blossom water
- 1 tsp rose water
- 1 cup pancake mix
- 1 cup milk
- 1 egg
- 1 tbsp vegetable oil
Instructions
- In a bowl, mix the semolina, mozzarella cheese, melted butter, sugar, pistachios, simple syrup, orange blossom water, and rose water to make the knafeh filling.
- In another bowl, prepare the pancake batter by mixing the pancake mix, milk, and egg until smooth.
- Heat a non-stick pan over medium heat and brush with vegetable oil.
- Pour a small amount of the pancake batter into the pan to form a small pancake.
- Sprinkle a generous amount of the knafeh filling on top of the pancake.
- Cover the filling with a little more pancake batter to encase the knafeh.
- Cook until the bottom is golden brown, then carefully flip the pancake and cook the other side until golden brown.
- Repeat with the remaining batter and filling to make more pancakes.
- Serve the knafeh pancakes warm, drizzled with extra simple syrup and topped with extra chopped pistachios.
