Koat Pitha (black Sesame Pudding)
Koat Pitha, also known as Black Sesame Pudding, is a traditional dessert from Tripuri Cuisine. This sweet and nutty pudding is a popular treat during festivals and special occasions.
Ingredients
- 1 cup black sesame seeds
- 1/2 cup jaggery (or brown sugar)
- 3 cups water
- 1/4 teaspoon cardamom powder
Instructions
- In a pan, dry roast the black sesame seeds until they turn golden brown and release a nutty aroma. Let them cool.
- Grind the roasted sesame seeds into a fine powder using a blender or food processor.
- In a separate pan, heat the water and jaggery (or brown sugar) until the jaggery dissolves completely.
- Add the ground sesame powder to the pan and stir continuously to avoid lumps.
- Cook the mixture on low heat for 15-20 minutes, stirring frequently, until it thickens into a pudding-like consistency.
- Stir in the cardamom powder and remove from heat.
- Pour the pudding into serving bowls and let it cool before serving.
