Ingredients

  • 1 cup black sesame seeds
  • 1 cup rice flour
  • 1/2 cup jaggery, grated
  • 1/2 cup coconut, grated
  • 1/2 tsp cardamom powder
  • 1/2 cup water
  • Oil for greasing

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a dry skillet, toast the black sesame seeds over medium heat until fragrant, about 3-4 minutes. Let them cool.
  3. Grind the toasted sesame seeds into a fine powder using a food processor or blender.
  4. In a mixing bowl, combine the ground sesame seeds, rice flour, grated jaggery, grated coconut, and cardamom powder. Mix well.
  5. Add water gradually and mix to form a thick batter.
  6. Grease the muffin tin with oil and spoon the batter into each cup, filling them about 3/4 full.
  7. Bake in the preheated oven for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
