Koat Pitha Muffins (black Sesame Muffins)
Koat Pitha Muffins, also known as Black Sesame Muffins, are a traditional delicacy from Tripuri Cuisine. These muffins are made with black sesame seeds and have a unique nutty flavor that pairs perfectly with a cup of tea or coffee.
Ingredients
- 1 cup black sesame seeds
- 1 cup rice flour
- 1/2 cup jaggery, grated
- 1/2 cup coconut, grated
- 1/2 tsp cardamom powder
- 1/2 cup water
- Oil for greasing
Instructions
- Preheat the oven to 350°F (175°C).
- In a dry skillet, toast the black sesame seeds over medium heat until fragrant, about 3-4 minutes. Let them cool.
- Grind the toasted sesame seeds into a fine powder using a food processor or blender.
- In a mixing bowl, combine the ground sesame seeds, rice flour, grated jaggery, grated coconut, and cardamom powder. Mix well.
- Add water gradually and mix to form a thick batter.
- Grease the muffin tin with oil and spoon the batter into each cup, filling them about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Remove from the oven and let the muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
