Ingredients
- 4 medium potatoes, peeled and cubed
- 2 tablespoons vegetable oil
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon red chili powder
- Salt to taste
- 2 cups water
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
- Add the chopped onion and sauté until it turns golden brown.
- Stir in the chopped tomatoes and cook until they are soft and the oil starts to separate.
- Add the turmeric, coriander, cumin, red chili powder, and salt. Mix well and cook for a few minutes.
- Add the cubed potatoes and stir to coat them with the spice mixture.
- Pour in the water and bring the curry to a boil. Reduce the heat, cover the pan, and simmer for about 15-20 minutes, or until the potatoes are tender.
- Garnish with fresh cilantro and serve hot with steamed rice or bread.
