Kodo Ko Aloo Tarkari (sikkimese Style Spiced Potato Curry)

Ingredients

  • 4 medium potatoes, peeled and cubed
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon red chili powder
  • Salt to taste
  • 2 cups water
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
  2. Add the chopped onion and sauté until it turns golden brown.
  3. Stir in the chopped tomatoes and cook until they are soft and the oil starts to separate.
  4. Add the turmeric, coriander, cumin, red chili powder, and salt. Mix well and cook for a few minutes.
  5. Add the cubed potatoes and stir to coat them with the spice mixture.
  6. Pour in the water and bring the curry to a boil. Reduce the heat, cover the pan, and simmer for about 15-20 minutes, or until the potatoes are tender.
  7. Garnish with fresh cilantro and serve hot with steamed rice or bread.
