Koeksister Pancakes

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Vegetable oil for frying
  • 1 cup koeksister syrup

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a non-stick pan over medium heat and lightly grease with vegetable oil.
  5. Pour 1/4 cup of batter into the pan and cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Repeat with the remaining batter.
  7. Drizzle the koeksister syrup over the pancakes before serving.
