Kofta (afghan Meatball Curry)

Ingredients

  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup bread crumbs
  • 1 egg
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken or beef broth
  • 1/2 cup plain yogurt
  • 2 tbsp fresh cilantro, chopped (for garnish)

Instructions

  1. In a large bowl, mix together the ground beef, onion, garlic, cilantro, bread crumbs, egg, cumin, coriander, turmeric, cayenne pepper, salt, and pepper. Form the mixture into small meatballs.
  2. Heat the vegetable oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides. Remove the meatballs from the skillet and set aside.
  3. In the same skillet, add the diced tomatoes and broth. Bring to a simmer and return the meatballs to the skillet. Cover and cook for 20-25 minutes, or until the meatballs are cooked through.
  4. Stir in the plain yogurt and cook for an additional 5 minutes. Garnish with fresh cilantro before serving.
