Kofta (afghan Meatball Curry)
Kofta is a traditional Afghan dish made of spiced meatballs cooked in a flavorful curry sauce. This Pashtun Cuisine recipe is a perfect combination of savory and aromatic flavors that will surely delight your taste buds.
Ingredients
- 1 lb ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup bread crumbs
- 1 egg
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp vegetable oil
- 1 can (14 oz) diced tomatoes
- 1 cup chicken or beef broth
- 1/2 cup plain yogurt
- 2 tbsp fresh cilantro, chopped (for garnish)
Instructions
- In a large bowl, mix together the ground beef, onion, garlic, cilantro, bread crumbs, egg, cumin, coriander, turmeric, cayenne pepper, salt, and pepper. Form the mixture into small meatballs.
- Heat the vegetable oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides. Remove the meatballs from the skillet and set aside.
- In the same skillet, add the diced tomatoes and broth. Bring to a simmer and return the meatballs to the skillet. Cover and cook for 20-25 minutes, or until the meatballs are cooked through.
- Stir in the plain yogurt and cook for an additional 5 minutes. Garnish with fresh cilantro before serving.
