Ingredients

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • 1 can (14 oz) crushed tomatoes
  • 1 cup chicken or beef broth

Instructions

  1. In a large bowl, mix together the ground beef, onion, garlic, parsley, coriander, cumin, paprika, cayenne pepper, salt, and pepper until well combined.
  2. Shape the mixture into small meatballs, about 1 inch in diameter.
  3. Heat the vegetable oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5-7 minutes.
  4. Pour in the crushed tomatoes and broth, stirring gently to combine. Bring the sauce to a simmer.
  5. Cover the skillet and let the meatballs simmer in the sauce for 15-20 minutes, or until cooked through.
  6. Serve the kofta hot, garnished with additional parsley if desired.
