Kofta (afghan Meatballs In Tomato Sauce)

Ingredients
- 1 lb ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp vegetable oil
- 1 can (14 oz) crushed tomatoes
- 1 cup chicken or beef broth
Instructions
- In a large bowl, mix together the ground beef, onion, garlic, parsley, coriander, cumin, paprika, cayenne pepper, salt, and pepper until well combined.
- Shape the mixture into small meatballs, about 1 inch in diameter.
- Heat the vegetable oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5-7 minutes.
- Pour in the crushed tomatoes and broth, stirring gently to combine. Bring the sauce to a simmer.
- Cover the skillet and let the meatballs simmer in the sauce for 15-20 minutes, or until cooked through.
- Serve the kofta hot, garnished with additional parsley if desired.
