Ingredients
- 1 lb ground lamb
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1/4 tsp cinnamon
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 can (14 oz) crushed tomatoes
- 1 cup chicken or vegetable broth
- 1/4 cup fresh cilantro, chopped (for garnish)
Instructions
- In a large bowl, mix the ground lamb, onion, garlic, parsley, cumin, paprika, cinnamon, salt, and pepper until well combined. Shape the mixture into small meatballs.
- Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Remove the meatballs from the skillet and set aside.
- In the same skillet, add the crushed tomatoes and broth. Bring to a simmer, then return the meatballs to the skillet. Cover and cook for 20-25 minutes, or until the meatballs are cooked through and the sauce has thickened.
- Sprinkle with fresh cilantro before serving. Enjoy the kofta hot with couscous or crusty bread.
