Kofta Curry

Ingredients

  • 1 lb ground lamb or beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 1 cup tomato puree
  • 1 cup coconut milk
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/2 cup chicken or vegetable broth

Instructions

  1. In a large bowl, mix together the ground meat, onion, garlic, cumin, coriander, chili powder, cinnamon, cilantro, salt, and pepper. Form the mixture into small meatballs.
  2. Heat the vegetable oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides. Remove from the skillet and set aside.
  3. In the same skillet, add the tomato puree, coconut milk, garam masala, turmeric, and paprika. Stir to combine.
  4. Pour in the chicken or vegetable broth and bring the sauce to a simmer.
  5. Return the meatballs to the skillet, cover, and simmer for 15-20 minutes, or until the meatballs are cooked through and the sauce has thickened.
  6. Serve the kofta curry hot with steamed rice or naan bread.
