Ingredients

  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika
  • 1/4 tsp cinnamon
  • 6 cups beef or vegetable broth
  • 1/2 cup orzo pasta
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix together the ground beef, onion, garlic, breadcrumbs, egg, cumin, coriander, paprika, cinnamon, salt, and pepper. Form the mixture into small meatballs.
  2. In a large pot, bring the broth to a simmer over medium heat. Add the orzo pasta and meatballs to the pot. Cook for 15-20 minutes, or until the meatballs are cooked through and the orzo is tender.
  3. Stir in the chopped parsley and adjust the seasoning with salt and pepper, if needed.
  4. Serve the Kofta Shorba hot, garnished with additional parsley if desired.
