Kofta Shorba (assyrian Meatball Soup)
Kofta Shorba is a traditional Assyrian meatball soup that is packed with warm spices and hearty flavors. This comforting soup is perfect for a cozy family meal or a gathering with friends.
Ingredients
- 1 lb ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup breadcrumbs
- 1 egg
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp paprika
- 1/4 tsp cinnamon
- 6 cups beef or vegetable broth
- 1/2 cup orzo pasta
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- In a large bowl, mix together the ground beef, onion, garlic, breadcrumbs, egg, cumin, coriander, paprika, cinnamon, salt, and pepper. Form the mixture into small meatballs.
- In a large pot, bring the broth to a simmer over medium heat. Add the orzo pasta and meatballs to the pot. Cook for 15-20 minutes, or until the meatballs are cooked through and the orzo is tender.
- Stir in the chopped parsley and adjust the seasoning with salt and pepper, if needed.
- Serve the Kofta Shorba hot, garnished with additional parsley if desired.
