Ingredients
- 4 large bell peppers
- 500g ground beef
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/2 cup cooked rice
- 2 tablespoons tomato paste
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a bowl, mix the ground beef, onion, tomatoes, cooked rice, tomato paste, cumin, paprika, salt, and pepper.
- Stuff the bell peppers with the kofta mixture and place them in a deep skillet.
- Add 1 cup of water to the skillet and cover with a lid.
- Cook on the stovetop over medium heat for 30-40 minutes, or until the peppers are tender and the kofta is cooked through.
- Garnish with fresh parsley before serving.
