Ingredients

  • 4 large bell peppers
  • 500g ground beef
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/2 cup cooked rice
  • 2 tablespoons tomato paste
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a bowl, mix the ground beef, onion, tomatoes, cooked rice, tomato paste, cumin, paprika, salt, and pepper.
  4. Stuff the bell peppers with the kofta mixture and place them in a deep skillet.
  5. Add 1 cup of water to the skillet and cover with a lid.
  6. Cook on the stovetop over medium heat for 30-40 minutes, or until the peppers are tender and the kofta is cooked through.
  7. Garnish with fresh parsley before serving.
