Ingredients
- 1 lb ground beef
- 1 can chickpeas, drained and rinsed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/4 tsp cayenne pepper
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- 2 cups beef or vegetable broth
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large bowl, mix the ground beef, chopped onion, garlic, cumin, coriander, cinnamon, cayenne pepper, cilantro, and parsley. Season with salt and pepper, then form the mixture into small meatballs.
- Heat the olive oil in a large pot over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes.
- Add the chickpeas and broth to the pot. Bring to a simmer, then cover and cook for 45 minutes, stirring occasionally.
- Adjust the seasoning with salt and pepper if needed. Serve the kofta stew hot, garnished with additional cilantro and parsley if desired.
