Ingredients

  • 1 lb ground beef
  • 1 can chickpeas, drained and rinsed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 2 cups beef or vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, mix the ground beef, chopped onion, garlic, cumin, coriander, cinnamon, cayenne pepper, cilantro, and parsley. Season with salt and pepper, then form the mixture into small meatballs.
  2. Heat the olive oil in a large pot over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes.
  3. Add the chickpeas and broth to the pot. Bring to a simmer, then cover and cook for 45 minutes, stirring occasionally.
  4. Adjust the seasoning with salt and pepper if needed. Serve the kofta stew hot, garnished with additional cilantro and parsley if desired.
