Kofta (sudanese Spiced Lamb And Chickpea Stew)

Ingredients
- 1 lb ground lamb
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/4 tsp cayenne pepper
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- 2 cups chicken or vegetable broth
- Salt and pepper to taste
Instructions
- In a large bowl, mix the ground lamb, chopped onion, minced garlic, cumin, coriander, cinnamon, cayenne pepper, cilantro, and parsley. Season with salt and pepper, then shape the mixture into small meatballs.
- Heat a large pot over medium heat and add the meatballs. Cook until browned on all sides, then remove from the pot and set aside.
- In the same pot, add the chickpeas and sauté for 3-4 minutes. Return the meatballs to the pot.
- Pour in the broth and bring to a simmer. Cover and cook for 30-40 minutes, or until the meatballs are cooked through and the stew has thickened.
- Adjust the seasoning if needed, then serve the kofta stew hot, garnished with additional fresh herbs if desired.
