Ingredients

  • 1 lb ground lamb
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 2 cups chicken or vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the ground lamb, chopped onion, minced garlic, cumin, coriander, cinnamon, cayenne pepper, cilantro, and parsley. Season with salt and pepper, then shape the mixture into small meatballs.
  2. Heat a large pot over medium heat and add the meatballs. Cook until browned on all sides, then remove from the pot and set aside.
  3. In the same pot, add the chickpeas and sauté for 3-4 minutes. Return the meatballs to the pot.
  4. Pour in the broth and bring to a simmer. Cover and cook for 30-40 minutes, or until the meatballs are cooked through and the stew has thickened.
  5. Adjust the seasoning if needed, then serve the kofta stew hot, garnished with additional fresh herbs if desired.
