Kofta (sudanese Spiced Lamb Chops)

Ingredients

  • 1 lb ground lamb
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, mix the ground lamb, chopped onion, minced garlic, ground cumin, ground coriander, cinnamon, cayenne pepper, salt, and pepper until well combined.
  2. Divide the mixture into 8 equal portions and shape each portion into a small patty or a chop-like shape.
  3. Heat the olive oil in a large skillet over medium heat. Add the lamb chops and cook for 3-4 minutes on each side, or until browned and cooked through.
  4. Remove the lamb chops from the skillet and let them rest for a few minutes before serving.
